Mango Sticky Rice is one of my fave Thai dessert, but because it has so much carbs I rarely get to eat it. Luckily there are rice substitutes out there that can help with my dessert dilemma.

Mango sticky rice is a traditional Thai dessert made of glutinous rice, coconut milk & mangoes. I love my asian foods and of course it always comes with all the carbs aka all the rice. So today I want to share with you what I use to substitute rice and pasta— Miracle Noodles. Unlike rice that’s made of high grain sugar, Miracle Rice is made of 97% water and 3% soluble fiber from the Japanese konjac plant. It doesn’t have a taste so just like rice, it pair perfectly with meat, sauces and even fruits. One of my favorite fruits are mangoes and the best ones can be found in Southeast Asia. A little tip, Champagne mangoes from Mexico does the trick as well! So I thought it was time to reunite with a love of mine, Mango Sticky Rice and make it low carb!
