What the heck are zoodles? Zoodles are zucchini noodles, plain and simple. There are a lot of benefits to eating zoodles, but most people love it because it’s low in calories. You’ll have to eat about 5 to 6 cups of zoodles just to reach the same calories as 1 cup of regular noodles. For me, I like it a lot because it doesn’t taste like veggies and I increase my vegetable intake! I’m really bad about eating my greens, but with zoodles, I don’t even have to worry about it.Get A Spiralizer

Ingredients:
- 3 pieces of zucchini
- 1/3 c almond butter, softened
- 2 tbs honey
- 1/4 c coconut amino, buy my fave HERE
- juices of 2 limes
- 1 tsp sriracha sauce
- 1 clove garlic, grated
- 3 tbs olive oil
- 2 c sliced rotisserie chicken
- spinach
- shredded carrots
- scallions
- almonds
- parsley
Instructions:
- Peel zucchini and cut edged, spiralize.
- Make Satay sauce. In a separate bowl, mix Almond Butter, honey, coconut amino, lime juice, Sriracha sauce and garlic and whisk. Pour Olive Oil slowly while whisking sauce.
- Pour Satay sauce over zoodles and toss.
- Plate wet zoodles and top with toppings of your choice.
