Who doesn’t love chicken fingers? They’re super easy to make, fun to eat and you don’t need utensils for them. And now we’ve made it even better by making it Keto friendly! Here’s our take on the classic, Chicken Fingers:
Keto Chicken Fingers with Dipping Sauce
1.5 lb chicken thigh cut into strips
Yogurt Garlic Dip:
1 ½ c Greek Yogurt Full Fat
2 T chives
2 T Basil
2 T Parsley
1 clove garlic minced
2 T lemon juice
Make Chicken Fingers
Preheat oven to 425 degrees.Season chicken strips with salt and pepper to taste. Working one at a time, dip the chicken strips in coconut milk, then coconut flakes pressing to coat. Place breaded chicken strips in a prepared lightly oiled oven pan with aluminum foil. Bake for 12-15 minutes, then broil for 3-5 min or until chicken has browned.
Combine lemon juice with garlic and let it soak for 5 minutes so the garlic taste will mellow. Mix in yogurt and herbs. Salt and Pepper to taste.
